Dolphins are one of the smartest animals on earth, and science is just beginning to understand just how intelligent they are. Thought to be one of only a couple of animal species on the planet that use tools, make art and are even self aware, able to recognize themselves when looking into a mirror. Researchers are also beginning to realize that these marine mammals have an extensive language that they use to communicate, and that it appears as if each ‘Flipper’ even has its own name which other members of the pod use to refer to specific animals.

One of the best parts about the Emerald Coast is our abundance of superbly delicious, locally caught seafood

That is so fresh, you can get it right from the boat that it was caught on, pulled from the pristine Gulf waters surrounding Destin, Florida.

A local delicacy along these shores, Oysters have a long history as a favored food dating back to the ancient Greeks and Romans. Feeding mainly on single-cell plants that flourish in our rich estuaries, where nutrient-rich freshwater rivers meet coastal saltwater, Florida’s Eastern oysters grow rapidly and can reach market size in less than two years.

Along Florida’s Gulf Coast, oysters are harvested commercially from small boats by fishermen using large, long-handled tongs to scoop them from the sandy-bottom beds. The extra lean meat has a tender to firm texture, with a slight salty flavor that captures the wonderful essence of the Gulf. Hard clams are a great substitution if oysters cannot be found.

Cooking Tips

  • Wash live oysters thoroughly under cold running water prior to cooking.
  • Oysters become plump and opaque and the edges begin to curl when thoroughly cooked.
  • Serve roasted and grilled oysters in shells with melted butter or a sauce.

Enjoy this much adored recipe with your loved ones, which can be prepared easily in your suite’s fully equipped kitchen and savored on your private patio while you watch the setting sun paint the sky with vibrant colors. Serve with an ice cold lager or chilled white wine.

SPICY JALAPENO CHEESE AND BACON OYSTERS

  • 36 Florida oysters, shucked, on the half shell
  • Rock salt
  • 12 ounces low-fat mozzarella cheese, grated
  • ½ cup cooked bacon, crumbled
  • 4 Florida jalapeno peppers, chopped

Arrange oysters on rock salt in a baking dish. Top each oyster with ½ teaspoon of the cheese crumbled bacon and chopped jalapeno to taste. Bake in a preheated oven at 350 degrees F for 10 minutes or until edges of oysters begin to curl.

The Wednesday Night Concert Series Continues…

Enjoy this free holiday concert each week from 7 to 9 pm at the Events Plaza of The Village of Baytowne Wharf in Sandestin.

It’s a Holiday Pops Concert

The Northwest Florida Symphony Orchestra adds a real festive touch to the Destin holiday season on Friday, December 9th at 7:30 pm with a Holiday Pops concert at Niceville’s Mattie Kelly Arts Center. The NFSO will be joined by the Northwest Florida Symphony Chorale to fill the air with music while they perform beautiful seasonal favorites and have a good old-fashioned carol sing-along.

“What’s That?” You Say? Why, It’s a Tuba Christmas Concert, Lantern Parade and a Giant Elf!

The Village of Baytowne Wharf is hosting a free Tuba Christmas Concert beginning at 5 pm on Saturday, December 10th. Following this unique musical event at 6 pm will be the annual Holiday Lantern Parade featuring commissioned paper lanterns in the shapes of iconic holiday symbols. Attendees are invited to make their own paper lanterns.

Here in Destin, we are thankful to live in such a beautiful place in such a beautifully diverse world.

In December of 2016, there are many holidays of importance to our guests from cultures around the world.

Just last week was the important Buddhist holiday of Bodhi Day and just a sample of holidays still to come in the second half of this month includes:

  • 16-25th – Posades Navidenas
  • 17-24th – Hanukkah The Festival of Lights
  • 21st – Winter Solstice
  • 24-25th – Christmas Eve and Christmas Day

While we are not currently aware of any celebrations for Posades Navidenas at this time, there are several events happening in the next few weeks to celebrate the Festival of Lights.

Saturday, December 17.

It’s a magical Christmas Eve, and all of the children in your town are sleeping. Well, all of the children but you! How could you possibly fall asleep when you know Santa and his sleigh are on their way? Join us for Storytime and activities featuring Santa’s Sleigh Is on Its Way!

Friday, December 16.

7:30 pm

Fort Walton Beach’s Temple Beth Shalom Family Chanukah Night. Families can bring menorahs for a group lighting and hear the story of Chanukah.

Monday, December 26

5:30 pm

Chabad of the Emerald Coast plans the biggest area Chanukah event with a Grand Menorah Lighting at HarborWalk Village in Destin.  Lighting of the Menorah on the main stage, family games and activities, special holiday music and many specialty holiday foods and favorites will be available at the free event.
